Even though the most common examples of this are in the Sith Wars, where you asked the question, since the question is asked about the entire history of Star Wars, I moved it into the Legacy forum, where questions that span the eras go.
It seems that the common use of red lightsabers began in the time of Darth Revan (KOTOR games), as no Sith before that has been shown with a red blade. Exar Kun and Ulic Qel-Droma are the best examples, as both continued to use their Jedi lightsabers after they became Sith - although Lord Kun modified his into the first double-bladed lightsaber, it was still with a blue blade.
However, the color of a lightsaber blade is simply a manifestation of the color of its focusing crystal, so a Sith or a Jedi can carry a lightsaber of any color, or they could even change the color of the blade, by changing the crystal. It just seems that red focusing crystals were not commonplace before the Sith Empire of Revan.

Yeah, in KOTOR and so on, Sith have been seen to use red, yellow, orange, silver, green and blue lightsabers.
